Marinated Veggies

This marinade for grilled vegetables is a healthy way to flavor veggies. The grilled veggies make a great sandwich, too!

Ingreadient

  • 16 large fresh button mushrooms
  • 16 cherry tomatoes
  • ½ cup thickly sliced zucchini
  • ½ cup sliced red bell pepper
  • ½ cup sliced yellow bell pepper
  • ½ cup sliced yellow squash
  • ½ cup sliced red onion
  • ½ cup olive oil
  • ½ cup soy sauce
  • ½ cup lemon juice
  • ½ clove garlic, crushe

Direction

  1. Place mushrooms, tomatoes, zucchini, bell peppers, squash, and red onion into a large bowl.
  2. Mix together olive oil, soy sauce, lemon juice, and garlic in a small bowl. Pour over vegetables; toss to coat. Cover the bowl and marinate in the refrigerator for 30 minutes.
  3. Preheat the grill for medium heat. Lightly oil the grates.
  4. Cook marinated vegetables on the preheated grill until tender, 12 to 15 minutes.
